At the helm is Chef Darren MacLean who drives his #localjapanese philosphy by selecting local and sustainable ingredients paired with classic japanese techniques to create a cuisine that is as unique as it is exciting.

Innovation is always on the menu at Shokunin! The only restaurant in Calgary to utilize real Kyushu binchotan charcoal, fresh wasabi root, Calgary's First Sustainable sushi program as well as the only beer in the world brewed with Canadian Sake Kasu! For 2 years Shokunin has proven itself not only one of the most dynamic and exciting restaurants in the Calgary but also nationally.

Shokunin was born of the idea to provide exceptional food and cocktails in a room that is all inclusive. Crafted cocktails give way to charred yakitori and small plates shared among friends with a bottle of sake. Seasonal and local ingredients are combined with traditional Japanese techniques and flavour profiles to create a truly contemporary Japanese dining experience.

Note: This 3 course meal comes as a 3 level stacked bento box chock full of sushi, Sashimi, fresh wasabi, tempura, rice and beef/pork.

Grilled Qualicum Bay Scallop and Seasonal Sushi

Beshi Junmai Gingo Sake bright acidity with a crisp finish. This will compliment the clean sushi and also the rich flavour of the scallop and butter

Binchotan Grilled Yakitori with Miso Cured Bone Marrow

48 Hour cured Alberta beef bone marrow served with assortment of 4 choice cuts chicken, vegetables and beef charcoal roasted on a skewer. Served with rice, pickles

Aizuhomare (extreme) Junmai Dai Gingo Sweet and bright this is unlike any sake you have tried. Perfect for cutting through fatty and smokey grilled meats and vegetables.

Matcha Gelato, black tea caramel

MomoKawa Nigori Sake creamy mouthfeel with notes of stewed raisin and almond makes for a beautiful foil for the rich chocolate torte.
